Serves 4
Ingredients
- 2 cooked salmon fillets
- 75g Gruyère cheese, chopped into small cubes
- 2 tbsp extra virgin olive oil, for the asparagus
- 2 large eggs + 1 egg yolk
- 1 tsp Dill, Lemon & Garlic Fresh Herb Salt
- 8 fl oz (225ml) double cream
- 2 fl oz (60ml) milk
- 1 bunch asparagus, woody ends trimmed
- 2 handfuls petit pois (small green peas)
- 1 pack of shortcrust pastry (or homemade if you prefer)
How to make salmon and asparagus flan
1. Grill the asparagus
Preheat the grill to medium-high. Toss the trimmed asparagus with the olive oil and arrange in a single layer on a grill tray. Grill until lightly coloured and just tender, turning halfway through. Check frequently, as cooking time will depend on the thickness of the spears and your grill. Leave to cool slightly, then chop into bite-sized pieces.
2. Prepare the pastry base
Preheat the oven to 200°C (390°F). Line a flan dish with the shortcrust pastry, making sure the sides are high. Prick the base all over with a fork. Part-bake for around 10 minutes, then remove from the oven.
3. Make the egg mixture
Reduce the oven temperature to 180°C (350°F), Gas Mark 4. In a mixing bowl, beat the eggs and egg yolk together with the cream, milk and 1 tsp of Dill & Lemon Fresh Herb Salt.
4. Assemble and bake
Scatter the chopped Gruyère, grilled asparagus pieces, cooked peas and flaked salmon over the pastry base. Gently pour the egg mixture on top. Bake for 30–40 minutes, or until golden and set in the centre.
