Melt in your Mouth Blueberry Cake
I know!!! It doesn't involve Herbs and only a pinch of salt but it is too delicious and quick not to share!!!
Ingredients:
175g greek yogurt
200g caster sugar or coconut sugar
3 eggs
Half teaspoon vanilla essence
80ml olive oil
200g self-raising flour
Pinch of salt
150g blueberries (I use more)
Preparation:
Preheat oven to 180. Grease & flour a 2lb loaf tin
Mix the yogurt, sugar, eggs, vanilla & olive oil in a large bowl until smooth.
Add the self-raising flour & salt and stir until the mixture is just combined without over-beating.
Fold in the blueberries.
Transfer mixture to the loaf tin.
Bake for 60 mins in pre-heated oven. (I check with a skewer at 50 mins but it depends on your oven.)
When cool, glaze with a mixture of 1 tablespoon clear honey & 1 tablespoon lemon juice or whatever you like really!!
