Fennel, Feta, Orange & Pistachio Salad
This is just so, so simple and such a lovely combination of fresh flavours.
In hot weather, like we having now, we all just want fresh, quick, light food - but we want it to be delicious too with lots of flavour! That's where we come in with our Fresh Herb Sea Salt seasonings and in this recipe I have used our very popular at this time of year - Chilli, garlic & parsley
1 large fennel bulb, trimmed, quartered & shaved or very thinly
sliced, fronds reserved
100g of feta cheese
100g of pomegranate seeds
60g of rocket or baby spinach
1/4 tsp of Fresh Herb Salt Chilli, garlic & parsley mixed into some Olive oil for the dressing
50g of pistachio nuts, roughly chopped
Using a sharp knife, cut a disc of peel off the top and base of each
orange, then, working from the top of the fruit downwards, cut away
the remaining peel and pith in strips, just enough to expose the
orange flesh, until the entire orange is peeled. Cut each orange in
half widthways, then cut each half into about 5 half-moon slices.
Arrange the fennel and oranges on a platter over a bed or rocket or baby spinach leaves
Crumble the feta, sprinkle over the pomegranate seeds and fennel fronds
and drizzle over the Olive oil and Chilli Fresh Herb Salt dressing
Scatter over the pistachios and serve
Perfect with fish or BBQ meats
