There's something timeless about a leg of lamb at Easter. The table is set, the family is gathered, and the kitchen smells incredible. But here's the thing — it doesn't have to be complicated. With the right seasoning, a beautiful roast lamb almost looks after itself.

What you'll need (serves 6)
- 1 leg of lamb (approx. 2kg)
- 1-2 tsp Fresh Herb Salt Company's Original Italian Fresh Herb Salt
- Olive oil
Method
- Take the lamb out of the fridge an hour before cooking. Preheat your oven to 200°C (180°C fan).
- Score the lamb all over with a sharp knife, making small cuts about 2cm deep.
- Drizzle generously with olive oil, then rub 1-2 tsp of Original Italian Fresh Herb Salt all over the joint.
- Roast for 20 minutes per 500g for pink, or 25 minutes per 500g for well done. Rest for at least 20 minutes before carving.
Serve with roast potatoes which have been cooked together with the lamb to absorb the italian flavour, carrots and peas and a good mint sauce. The herb salt forms a gorgeous crust and keeps the meat beautifully juicy.
